Meatless Mondays with Martha Stewart: Roasted Cauliflower, Chickpeas, & Sautéed Chard with Tahini Dressing

roasted cauliflower & chickpeas with tahini

I haven’t meant to be away this long. I have so many ideas and good eats to share with you, but little time to photograph them all. First because of moving into our new house, then last week because of planning for a craft show in Portland and to top it all off, a blog feature of our new tote bags on Design Sponge that has been keeping us very busy filling orders. I’ve also been spending every last spare moment getting in our raised beds so I can plant the garden. It’s coming along nicely and I’ll have to share them with you when it looks like more than bare earth. All good things that have been keeping me very busy, but keeping me away from time in this space. Thanks to everyone for your continued nice emails and comments, it means so much!

In the mean time, I created this savory dinner meal for Whole Living. It features a new take on my favorite tahini dressing and gets drizzled over a plate of lightly sautéed chard, roasted cauliflower, and chickpeas. It’s delicious and simple to make for a weeknight meal. Find the full recipe on Whole Living here.

Ps- For some reason the fields under “LEAVE A REPLY” aren’t labelled, so I couldn’t tell what to write where. (I tried in safari and firefox)

I made this last night and it was as delicious as it was easy! Even my meat-eating husband went back for seconds and was totally satisfied. This will become a regular meal in our house!
